Microwave Peanut Brittle

    1 tsp
  • butter
    1 tsp
  • granulated sugar
    1 c
  • raw peanuts
    1 c
  • salt
    1/8 tsp
  • vanilla
    1 tsp
  • white corn syrup
    1/2 c

  • quart casserole
  • cookie sheet

    Stir together raw peanuts , granulated sugar , white corn syrup , and salt in a quart casserole .

    Cook for ⏱️ 8 minutes on high, stirring well after ⏱️ 4 minutes .

    Add butter and vanilla to the syrup, blending well.

    Return to microwave and cook for ⏱️ 2 minutes longer on high.

    Peanuts will be slightly brown and syrup very hot.

    Add baking soda and stir gently until light and foamy.
