Microwave Peanut Brittle

raw peanuts1 c

white corn syrup1/2 c

- quart casserole
- cookie sheet

1Stir together raw peanuts , granulated sugar , white corn syrup , and salt in a quart casserole .raw peanuts: 1 c, granulated sugar: 1 c, white corn syrup: 1/2 c, salt: 1/8 tsp

2Cook for ⏱️ 8 minutes on high, stirring well after ⏱️ 4 minutes .

3Add butter and vanilla to the syrup, blending well.butter: 1 tsp, vanilla: 1 tsp

4Return to microwave and cook for ⏱️ 2 minutes longer on high.

5Peanuts will be slightly brown and syrup very hot.

6Add baking soda and stir gently until light and foamy.baking soda: 1 tsp

7Pour the mixture into a lightly greased cookie sheet .

8Let cool for ⏱️ 60 minutes .

9When cool, break into small pieces and store in an airtight container.
